Freshilicious Reds

Think of all of the beautiful red foods: the dark red of an apple, the pinkish red of a raspberry, the purplish red of a cherry, and the bright red of a bell pepper. Red foods are delicious! For those of us who are looking at a long hot summer ahead, there is great joy to be found in these delicious red foods: they are at their freshest, and available through many local sources. Shop at your farmer’s market for the best and “greenest” options! Think of the juicy watermelons, the sweet strawberries, and the tangy red cabbage!

Now that you are thinking about all of the possibilities, here is a great recipe that I had for dinner tonight:

Watermelon Raspberry Mint Salad

Watermelon Mint Raspberry Salad

4 cups (about 2 lbs) of seeded and cubed watermelon
1/3 c minced fresh mint
3 c fresh raspberries
1 Tbsp honey
2 tsp lime juice

Divide the watermelon cubes and sprinkle with minced mint. Top with equal amounts of raspberries and sprinkle with remaining mint. In a small bowl, mix honey and lime juice with a fork and drizzle over the melon and berries.

**We refrigerated ours for about 30 minutes and it was the perfect amount of time to marinate in the lime juice.

It was a perfect match with the risotto (alas, it was not red…)

    Thank you for sharing this Lolly, I think I am going to make it for a shower I am throwing in 2 weeks. I had a salad with melon, feta and mint recently. It was freakishly fantastic. But that is more pink and green (and white). It was good though.

    That looks delicious, but when it comes to “eating red” my all-time favorite has to be nice ripe tomatoes! I have four tomato plants in my little backyard garden, so hopefully I’ll be able to post some nice P.S. pictures before the end of the RED months!

    my family has become addicted to the raw kale salad from whole foods – a perfect project spectrum meal, i think. the whole foods version is very expensive, so we’ve concocted our own version. i’ll leave it for you in case you want to try it :-)

    need:
    raw kale (as much or as little as you’ll eat – be warned though, it goes fast. i usually get 3 heads for 3 people and it goes in 2 days)

    vine ripened tomatoes – 3-4 per head of kale

    dried cranberries – again, tons of these. i get 1/2-3/4 lb for each head of kale

    lemon juice

    olive oil

    pine nuts or almonds (optional)

    the real key to this salad are the “accessories” – the tomatoes and cranberries and (if you choose) nuts – and the marinating. leaving it overnight will really bring out the flavors.

    so, chop the kale and tomatoes finely and throw in a big bowl. add cranberries. make lemon juice/olive oil dressing to your personal tastes. beware that lots of lemon juice will rob your mouth of some skin – it tastes great, but scours your mouth if you add too much.
    toss everything together very well and refrigerate for as long as you can stand. overnight is good, all day is better.
    take out, toss again, and serve.

    it makes a great things for picnics and bar-b-q’s, not to mention the color is perfect for project spectrum!!

    That sounds delicious! My Mother’s raspberry canes are loaded with flower buds, she has loads of wild mint in her front garden and watermelon is perfect up here about then so I believe that will become a favourite in July and August.

    I make a version of that salad that involves whatever fruit you can find. I’ve never put mint in mine – usually just some poppy seeds – but I’ll definitely try it. I just had some salad this afternoon, actually, that was strawberries and blueberries. I’ve done it in the winter with bananas, apples, oranges, and pears. Seriously, whatever you have goes, and it always tastes great. I’ve also done it with lemon juice instead of lime.

    Very pretty and it sounds delicious! That’s pretty much my Grandma Frances’ fruit salad dressing. It’s also excellent with mixed blueberries and green grapes. Red fruits are also very nutritious. Lycopene is one of the red pigments (tomatoes and watermelon) that are very beneficial to our health.
